Balsamic Reduction

Now this is an easy one: Balsamic Reduction.

If you are looking for an easy Friday night dinner, something light but tasty then this is a wonderful addition to add flavor.

Balsamic Reduction

15-20 minutes; Yields: 1/2 cup

1 cup Balsamic Vinegar

6 Tbsp brown sugar

Directions: Put the ingredients in a pan on the stovetop at medium heat. Stir to dissolve the sugar. When it starts to bubble, turn the heat to low and let it reduce to half its content. It should take about 15 minutes.

This has many uses. It would go well on slow-cooked red meat. On sliced peaches…endless possibilities.

We used fresh tomatoes and basil from the garden to make a tomato mix for bruschetta (of course, adding garlic, salt and pepper, onion, and olive oil). Then we drizzled the reduction over fresh mozzarella and the bruschetta.
